I can’t wait to go to a writer’s conference soon. I didn’t get to go last year because I had a knee replacement surgery. What I love about this conference is that the hotel is on a beach in Florida. I love water. In fact, I grew up on the Gulf Coast. The sound of the waves coming ashore is so soothing to me as well as the scent of salt and sea in the air. But what will really be good about the trip is seeing old friends.

Recipe of the Month:

This recipe came from one of my favorite sites for recipes. I love to use my slow cooker, especially in fall and winter. You’ll find the recipe below at https://www.braums.com/recipes/slow-cooker-beef-ziti/.

Slow Cooker Beef Ziti
1 pound ground beef, browned and drained
1/2 pound of sausage, browned and drained
1 T of spaghetti seasoning herbs
2 cups ricotta cheese
2 cups Italian cheese blend mozzarella cheese
1 jar spaghetti sauce (25 oz.)
1 package penne noodles (16 oz.)
1 cup beef broth

In a medium sized bowl, combine the ground beef, sausage, spaghetti sauce, seasonings and beef broth. In a separate medium bowl, combine the ricotta cheese and mozzarella cheese. Spray slow cooker cooking pot with non-stick cooking spray. Place 1/4 cup spaghetti sauce mixture in the bottom of slow cooker with 1/2 of the uncooked noodles, spread 1/2 of the cheese over the top, 1/4 cup of sauce and then repeat. Finish with cheese. Cook on low for 7 hours or high for 4 hours.

August 2019 Daley’s Newsletter

August 22^nd was my 49^th anniversary married to my husband. It’s hard to believe that we’ve been married that long. I met him at Vanderbilt University after only being there a month. I was a freshman, and he was a junior. We were married two years later, and I’ve never regretted it one day of my life. He’s my best friend as well as my husband. I love the flowers he’ll bring home out of the blue.

Monthly Recipe:

I love salad recipes, especially in the summer.

Greek Pasta Salad
(16-oz.) package bow-tie pasta
medium cucumber, diced
red bell pepper, diced
1/3 cup red onion, chopped
1 pt. cherry tomatoes, halved
2 Tbsp. sliced green olives
1 container Crumbled Feta Cheese
1 bottle of Girard’s® Champagne or Light Champagne dressing
Pepper to taste

Boil the bow-tie pasta according to package instructions. Drain and set aside to cool. Add cucumber, bell pepper, red onion, tomatoes, olives, and feta cheese to the pasta. Pour salad dressing on top and toss well. Allow to chill for several hours in fridge before serving or serve at room temperature.

July 2019 Daley’s Newsletter

I hope you’re having a wonderful summer. July is nearly over and has gone by fast. I took my two granddaughters to a new park called The Gathering Place which is a fantastic addition to Tulsa. There is so much to do for the whole family from trails, skateboarding, bicycling paths, a great large playground with something for all children. I wish I had a place like that when I was growing up. I loved to climb, and there were so many things to climb on at The Gathering Place.

July Recipe:

I love shrimp and this is a perfect dish for me. I hope you enjoy it. The recipe came from https://www.allrecipes.com/recipe/12775/spicy-grilled-shrimp/.

Ingredients

• 1 large clove garlic
• 1 teaspoon coarse salt
• 1/2 teaspoon cayenne pepper
• 1 teaspoon paprika
• 2 tablespoons olive oil
• 2 teaspoons lemon juice
• 2 pounds large shrimp, peeled and deveined
• 8 wedges lemon, for garnish

Directions

Turn the grill on to medium then put crushed garlic and salt in a small bowl. Add and stir in cayenne pepper and paprika and lastly in olive oil and lemon juice. It will form a paste. In another bowl toss shrimp and the above paste until coated. Lightly put oil on the grill then cook the shrimp for 2-3 minutes each side.

June 2019 Daley’s Newsletter

Since my last newsletter Oklahoma has dealt with some nasty weather, especially with lots of rain that has caused flooding. Hopefully some of the flood waters are starting to recede. I hope it continues. On a sunny cool day recently, I took my granddaughters to the zoo. The weather was perfect, and we had a great time, especially seeing the seal show. Recipe for the Month: Judy’s Strawberry Pretzel Salad (more like a delicious dessert)

Ingredients

• 1/2 cups crushed pretzels
• 4 1/2 tablespoons white sugar
• 3/4 cup butter, melted
• 1 cup white sugar
• 2 (8 ounce) packages cream cheese
• 1 (8 ounce) container frozen whipped topping, thawed
• 1 (6 ounce) package strawberry flavored Jell-O
• 2 cups boiling water
• 1 (16 ounce) package frozen strawberries

Directions

1. Preheat oven to 350 degrees F. Mix together the pretzels, 4 1/2 tablespoons sugar and melted butter. Press into the bottom of a 9×13 inch pan. Bake for 10 minutes, or until lightly toasted. Set aside to cool completely.

2. In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.

3. In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen strawberries and stir until thawed. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.

I hope everyone had a wonderful Mother’s Day this year. My husband and I took my ninety-six-year-old mother-in-law out to lunch on Mother’s Day. My son came along too. It was a really nice lunch, especially a piece of the best key lime pie I’ve ever had. The crust was made out of crushed pecans. Also, I hope you are enjoying your Memorial Day weekend. My Recipe for May

This is a recipe that’s really nutritious—Spinach Quiche from AllRecipes at https://www.allrecipes.com/recipe/16664/spinach-quiche/.

• 1/2 cup butter
• 3 cloves garlic, chopped
• 1 small onion, chopped
• 1 (10 ounce) package frozen chopped spinach, thawed and drained
• 1 (4.5 ounce) can mushrooms, drained
• 1 (6 ounce) package herb and garlic feta, crumbled
• 1 (8 ounce) package shredded Cheddar cheese
• salt and pepper to taste
• 1 (9 inch) unbaked deep-dish pie crust
• 4 eggs, beaten
• 1 cup milk

1. Preheat oven to 375 degrees F.

2. In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.

3. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.

4. Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.

It is fun being a grandmother! Recently I went to see my granddaughter in a school program. I took a lot of videos and photos and really enjoyed seeing her and her classmates performing. Recipe of the Month: Fudge Sundae Pie

Perfect for people who love chocolate and peanut butter.

Ingredients:

1/4 cup corn syrup
1/2 cup Braum’s Peanut Butter
2 tbsp. firmly packed brown sugar
3 tbsp. Braum’s Butter or Margarine
2 1/2 cups Rice Crispy cereal
1/2 cup Braum’s Fudge Topping
1 qt. Braum’s Premium Vanilla Ice Cream
6 tbsp. corn syrup

Instructions:

Mix together the corn syrup, brown sugar, and butter in a saucepan over low heat. Stir a few times. When the mixture starts boiling, take the pan off the burner. Add Rice Crispy cereal and stir until it is mixed well. Press into a 9-inch pan for the crust, then put it in the freezer until it is firm. Combine the peanut butter, fudge topping and 6 tablespoons of corn syrup, then spread 2/3 of the mixture over the crust. Freeze until firm. Layer softened ice cream over the frozen pie, then put into freeze again until firm. When you serve the pie, let it sit on the counter 10 minutes before you want to eat it. Warm the last third of the peanut butter mixture and drizzle it over the top.

I hope everyone had a wonderful Valentine’s Day with the people you love. Valentine’s Day means celebrating with the ones you love—young and old. To me it isn’t just for couples but family and friends. Below my husband gave me a bouquet of flowers. The colors are so beautiful and colorful. I’ve been enjoying them while I work. I look up at them, and the flowers bring a smile to my face and brighten my day (we’ve had a lot of cloudy days recently and since my surgery at the end of December, I’ve been at home a lot).

Recipe of the Month: Broccoli, Cheddar and Brown Rice Cakes

A healthy recipe that you can easily freeze to use later.

Ingredients:

Cooking spray
1 tablespoon unsalted butter
3/4 cup chopped yellow onion
4 garlic cloves, chopped
3/4 cup unsalted vegetable stock
12 ounces fresh broccoli florets, cut into 1/2-in. pieces
1 (8.8-oz.) pkg. precooked brown rice
1/4 cup whole-wheat panko (Japanese breadcrumbs)
1 tablespoon grainy mustard
1/2 teaspoon black pepper
3/8 teaspoon kosher salt
3/4 cup of pre-shredded reduced-fat sharp cheddar cheese
2 large eggs, lightly beaten
Sliced green onions (optional)

Directions:

Preheat the oven to 450 degrees and spray the cooking spray on the cookie sheet. At medium heat saute the onion and garlic in melted butter for 4 minutes. Add the stock and broccoli into the mixture and bring to a boil. Cook 3 minutes. Cook the brown rice as directed on the package then combine it with the above mixture in a large bowl. Add in panko, mustard, pepper, salt and 1/2 cup of the cheddar cheese. Make patties and put on the cookie sheet. Bake for 15 minutes. Then top the 1/4 cup of cheese left on top of the patties, then put back in to the oven (at 450 degrees) for four minutes. If you want, you can garnish with green onions on top.

January 2019 Daley’s Newsletter

I hope you had a wonderful New Year. Did you make any resolutions for 2019? I have to admit I didn’t. I used to do that at the beginning of every year, but I got discouraged when I didn’t make the goal—usually about losing weight or something similar. Instead over the years now, I make goals when I need to, like when I have a book to write. I figure out how many days I have and how many words I need to write to come up with my goal. Then I come up with a daily word count I need to write to make my deadline. May 2019 be a productive and satisfactory year for you. I wish you the best. Below is the picture of the one time this winter so far that we’ve had snow.

Recipe of the Month

Golden Potato Soup is a hearty soup for winter. I hope you enjoy it on a cold winter’s night.

Ingredients:

• 3 cups peeled and cubed potatoes
• 1/2 cup chopped celery
• 1/2 cup chopped onion
• 1 cube chicken bouillon
• 1 cup water
• 1 teaspoon dried parsley
• 1/2 teaspoon salt
• 1 pinch ground black pepper
• 2 teaspoons all-purpose flour
• 1 1/2 cups milk
• 1 1/2 cups shredded American cheese
• 1 cup chopped ham

In a large pot add potatoes, celery, onion, chicken bouillon, water and parsley flakes. Season with salt and pepper and simmer until vegetables become tender. In a separate bowl combine the flour and milk. When it is well mixed, add it to the soup mixture and cook until the soup thickens. Add in cheese, cooked ham or hamburger. Simmer the soup, stirring occasionally, until cheese is melted.

Years ago, I painted the walls in my office hot pink with white trim. I had an extra Christmas tree that I decided to put up in my office, so when I’m working I could enjoy it. Because I had hot pink walls, I began collecting flamingoes for my office. After decorating the tree that Christmas, it ended up becoming a permanent fixture in my office. I love looking at it. The ornaments mean something to me. Most are flamingo ornaments, but some aren’t. Have you ever put up an oddball Christmas tree, not quite the traditional kind?

Recipe for December

We usually have a ham every Christmas. I’m going to try this recipe this year. It looks delicious.

Ingredients:
1 fully cooked boneless ham (5 to 6 lb)
1/2 cup honey Dijon mustard
1/2 cup real maple syrup
1/2 cup packed brown sugar

Instructions:
Spray 6- to 7-quart oval slow cooker with cooking spray. Make cuts about 1 inch apart and 1/4 inch deep in diamond pattern in top of ham. Place ham in slow cooker. In a bowl, stir together mustard, syrup and brown sugar with whisk until well blended. Pour over ham. Cover and cook on Low heat setting 3 to 4 hours. Remove ham from slow cooker. Cover loosely with foil; let stand 10 to 15 minutes. Strain cooking juices. Slice ham; pour strained juices over ham.
