I hope all of you had a great Christmas. I did, but then with four granddaughters it’s hard not to get into the holidays and have fun. But I am so glad that spring is here. The flowers are blooming, the grass is starting to get green and the trees are leafing out. I love this time of year, especially after this snow filled winter. There were two weeks I was snowed in and only left the house when my husband took me to the grocery store. And that trip ended with our car stuck out in front of our house in the middle of the road. We had almost two feet of snow and Tulsa isn’t equipped for that kind of snow.


I’ve been baby-sitting my granddaughters lately. It has been so much fun to see the things they like to do. They like to play zoo at my house. They get all my stuffed animals and ceramic ones. Since I have a lot of flamingoes, that is their largest group of animals. They give tours of their zoo.



I have a book out in April called Trail of Lies, the fourth book in the Love Inspired Suspense continuity series about Texas Rangers. I did research about the current day Texas Rangers and came away with a lot of respect for this group of law enforcers.

Key Lime Cake (great for spring)


  • 1-3 ounce package lime flavored gelatin
  • 1 ½ cups sugar
  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 5 large eggs, slightly beaten
  • 1 ½ cups vegetable oil
  • ¾ cup orange juice
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • ½ cup lime juice
  • ½ cup confectioners’ sugar

Preheat the oven to 350 degrees. Grease and flour three 9-inch round cake pans. In a large mixing bowl, mix the gelatin, sugar, flour, salt, baking powder and baking soda. Stir to mix well. Add the eggs, oil, orange juice, lemon juice and vanilla. Divide the batter evenly among the three pans and bake for 35 to 40 minutes. Cool the layers in the pans for 5 minutes then turn them out onto racks. While the layers are still hot, mix the lime juice and confectioners’ sugar and pour I over the layers on the racks. You can pierce the layers with a fork to allow the glaze to soak in better. Allow the layers to cool completely as you prepare the icing.

Cream Cheese Icing

Cream ½ cup butter and 8 ounces of cream cheese (room temperature). Beat in the confectioners’ sugar until the mixture is smooth and easy to spread. Spread the icing between the layers and on the top and sides of the cake.
